Veggie Burger




Ingredients
Filling:
  • 2 cups no-salt-added canned black beans, drained and liquid reserved
  • 1 medium onion, quartered
  • ½ cup quick cooking rolled oats
  • 1 Tbsp. lime juice
  • 2 tsp. chili powder
  • Sea salt and freshly ground black pepper, to taste
Buns:
  • 4 100% whole wheat hamburger buns, split and toasted
  • 4 leaves leaf lettuce
  • 1 tomato, sliced
  • 2 red onion slices, separated
  • Condiments of your choosing (see headnote)
Instructions
  1. Using a food processor, combine the first 5 ingredients (up to the chili powder). Cover; blend until chunky but not pureed.
  2. Now, the mixture should be moist but not wet. Season with salt and pepper.
  3. Wet your hands. Shape the mixture into 4 3½-inch patties. Refrigerate for 20 minutes.
  4. Using a large skillet, cook the burgers over a medium heat for 10 minutes until lightly browned and cooked through, turning once.
  5. Toss the burgers onto the hamburger buns with lettuce, tomato and onion slices.
  6. Plate and serve!
